Take a quick look through the green beans. Find and remove any debris and funny looking beans. Weigh 'em. I'd say 130 grams is good. The roaster is rated for 150, but you run the risk of an uneven roast. Load the machine and set the program to your specs. We'll help you with that. 5, 4, 3, 2, 1 and go! Watch, listen, and smell. You'll soon detect a slight hint of new mown grass. The aroma will intensify. Listen closely. Within a few minutes you'll hear the some of the beans begin to crack. It is beginnings of the first crack. There will be two distinct cracks. The pace of the 1st crack will quicken. Watch. You'll see the green turn to yellow, to brown. As the brown gradually darkens, the 1st crack will lessen. There will be a second... Here it comes. It's difficult to hear the beginning of the 2nd crack over the noise of the machine. Watch the bean color and try to detect the change in aroma. No longer newly mown grass, now it's coffee. Very slightly into the 2nd crack, end the process and begin the cooling period. Record the time expired. Congratulations! You've roasted your own coffee. Let it rest for a day or so, then give it a try. If possible, find a burr grinder. Throw away that blade grinder. The difference is transformational. Get a scales. Try 52 grams to 6 cups. Go from there. Sample, evaluate, communicate, interact, refine.
